Keto has done so much for me, not just in my physique— my mental health had improved so much, and I say “had” because over the holidays I stopped Keto completely! Let me tell you, took a huge toll on me & took me back to my old self. To the girl who was mean to herself in the mirror, depressed who hated clothes and hated being seen. Now that I am back, I am only a couple of days in, but it makes a huge difference getting back to a routine and not feeding my body sugar or unhealthy carbs literally opens up my mind in a positive way. I saw myself in the mirror today & I was nice to myself, even tho I lost the abs & the scale doesn’t say “120lbs” anymore I am happy where I’m going! Keto Spinach and Pistachio Cup Cake Ingredients * 165 g almond flour * 3 tablespoon Greek yogurt * 125 g unsalted butter ( room temperature) * 2 handfuls fresh spinach * 1/3 cup Stevia * 4 eggs * 2 teaspoon baking powder * 1 teaspoon bicarbonate of soda * 2 teaspoon Cardamom powder * 1 teaspoon Vanilla extracts * 1 tablespoon lime zest * 1 tablespoon lime juice * 2 teaspoon rose water * 1 tablespoon rose petals * 100 g unsalted pistachios Instructions 1. Preheat oven to 160 C. 2. Place pistachios and rose petals in a food processor and blend until flour-like consistency. 3. Combine the yogurt , eggs butter,Vanilla ,Stevia,rose water, lime juice and spinach in a food processor and blend until smooth and creamy. 4. In a large bowl mix the flour, pistachio, baking powder, bicarbonate of soda cardamom and lime zest. 5. Add the spinach mixture to the bowl and mix until well combined. 6. Spoon the batter into lined muffin cups. 7. Bake for 30 minutes or until a toothpick inserted in the middle of the cake comes out clean. 8. Remove from the oven and let cool completely. 9. Swirl the Cream Cheese frosting over top. CREAM CHEESE Frosting INGREDIENTS * 1 tablespoon full fat soft cheese * 1 tablespoon unsalted butter * 1 tablespoon Stevia * 1 teaspoon orange blossom * 1 teaspoon Green food colouring * 1/2 teaspoon Vanilla extracts INSTRUCTION 1. Credit to respected owner Age 15 | Age 28⠀ By: @graceislivinglife⠀ ⠀ I honestly don’t really believe it either 😅 but... yup. That’s me in both photos.⠀ ⠀ Positive changes I made from then to now:⠀ 1. Eliminated carbohydrates, gluten, sugars, sugar substitutes, coffee & all caffeine, and more recently almost all plant foods from my diet. I eat meat, seafood, butter, salt, some dark chocolate and some fresh herbs. As always, I’ve tagged some great resources r.e. nutrition. ⠀ ⠀ 2. Prioritized sleep and mental health. This is easier said than done and took me many years to accomplish. ⠀ ⠀ 3. Stopped washing and dyeing my hair, learned how to care for #biracialhair properly, got smarter about heat styling.⠀ ⠀ 4. Stopped waxing my damn eyebrows 😂 I just tweeze them now. Also learned how to do my makeup to flatter my features. (Ladies, WHY did we think black eyeliner was cute?!)⠀ ⠀ 5. Started exercising, though these days I don’t do it nearly as intensely as I used to. My body needed a break.⠀ ⠀ 6. Started prioritizing going outside in nature and being in the sun whenever I can (but always using SPF!!! Alwaysssss.)⠀ ⠀ 7. Learned to listen to my body and honor its signals. Again, much easier said than done. ⠀ ⠀ 8. Research. So much research. That’s how I learned all of the above.⠀ ⠀ I go back and forth a lot when it comes to posting before and after/transformation photos, because I don’t like the idea of obsessing over age/the past/who I used to be... but for the purpose of Instagram, I think they’re the most effective representation of my journey. My goal is to show people that these changes are completely attainable, and you don’t need to buy products or get surgery to look younger and be healthier.
